Saccharin Sodium Dihydrate is an artificial sweetener with a sweetness level approximately 500 times that of sucrose in aqueous solutions. Along with aspartame, it was one of the only sweeteners approved for use in general food and beverages as of August 1983. Additionally, it has been noted to inhibit the activity of cholinesterase.

Properties:
Also known as soluble saccharin, Saccharin Sodium Dihydrate is the sodium salt of saccharin containing two molecules of water of crystallization. It appears as colorless crystals or a slightly white crystalline powder. It can easily lose its water of crystallization to form anhydrous saccharin, appearing as a white powder. It is odorless or has a faint odor, with an intensely sweet taste accompanied by a bitter aftertaste. Its sweetness is about 500 times that of sucrose. However, it has poor heat and alkali resistance; when heated under acidic conditions, its sweetness gradually fades. Furthermore, solutions with a concentration exceeding 0.026% will taste bitter.
