Glycerol tristearate, also known as tristearin, is a triglyceride formed by glycerol esterified with three stearic‑acid molecules. It appears as a white, waxy solid, insoluble in water but soluble in organic solvents. It naturally exists in animal fats and some vegetable oils.
As a common food additive, it acts as an emulsifier, stabilizer and anti‑caking agent in food processing. It is also widely used in cosmetics, candles and plastics, serving as thickener and lubricant. It undergoes hydrolysis to produce glycerol and stearic acid. It is non‑toxic and generally recognized safe for permitted applications.
