Xylanase from Trichoderma viride (EC 3.2.1.8) is an endo-1,4-β-xylanase, a hemicellulase produced by submerged fermentation of green mould Trichoderma viride. It catalyses hydrolysis of the β-1,4 glycosidic bonds in xylan, breaking down plant hemicellulose into xylose and xylooligosaccharides. Commercial preparations are generally off-white fine powder.
It has wide industrial applications. In feed industry, it reduces viscosity of grain feed, improves nutrient digestibility for livestock. In food processing, it clarifies fruit juice and optimises dough properties in baking. It is also adopted for bio-bleaching in pulp manufacturing.
Its catalytic activity relies strictly on suitable pH and temperature. Extreme heat leads to irreversible deactivation. The product needs sealed cool and dry storage to retain enzyme activity.
