Inulinase (EC 3.2.1.7) is a glycoside hydrolase that hydrolyses inulin, a polysaccharide found in chicory, Jerusalem artichoke and other plants. It breaks β-2,1 fructan linkages and mainly produces fructose and small amounts of glucose. Commercial inulinase is normally manufactured by microbial fermentation and supplied as off-white powder or liquid enzyme preparation.
Its major application is the production of high-fructose syrup as a natural biocatalyst. It is also used in food processing to improve the digestibility of plant raw materials containing inulin. In feed industry, it helps animals utilise inulin and promotes intestinal health.
Enzyme activity is greatly affected by pH and temperature. High temperature will cause permanent inactivation. The product requires sealed storage under cool and dry conditions to maintain catalytic capacity.
