Ascorbate oxidase is a copper-containing oxidase enzyme widely distributed in higher plants. It catalyses the oxidation of L-ascorbic acid (vitamin C) into dehydroascorbic acid, accompanied by oxygen consumption. Commercially, it is generally obtained by extraction from plant tissues or microbial fermentation. Its commercial forms are usually pale powder or liquid enzyme preparations.
This enzyme is primarily used in food processing. It can remove residual vitamin C in beverages and fruit juices to prevent undesired browning and stabilise product colour. It also finds applications in biochemical research for laboratory analysis of ascorbic acid.
Its catalytic activity is strictly dependent on pH and temperature. High temperature and extreme pH will irreversibly deactivate the enzyme. It should be sealed and stored under low temperature to retain activity. Industrial users must follow food safety specifications when applying this enzyme in edible products.
