Researchers deploy it to characterise carbohydrate‑degrading enzymes, compare digestibility of α‑1,4 versus α‑1,6 linkages, investigate Maillard reaction kinetics and validate analytical methods for quantifying branched sugars in fermented foods and starch syrups. It supports experiment design for developing prebiotic carbohydrate ingredients, yet stays confined to lab‑scale testing.
To conclude, pure isomaltose disaccharide has zero direct commercial food‑ingredient applications.
