Adonitol (ribitol, CAS 488‑81‑3) is a pentitol sugar‑alcohol, appearing as white crystalline powder, highly water‑soluble with mild sweet taste. It occurs naturally in certain plants and microorganisms.
It is mainly applied in biochemical research as microbial identification substrate and analytical standard. Though theoretically usable as low‑calorie sweetener and humectant, it is not widely approved as common food additive. It also serves as cryoprotectant for microbial strains.
