Maltotriitol (CAS 19467‑31‑9) is a sugar alcohol generated by hydrogenating maltotriose, a trisaccharide. It is a white, water‑soluble crystalline powder with mild sweetness equivalent to around 30 % of sucrose. It delivers low glycaemic response since it is incompletely digested in the human small intestine. It acts as humectant, bulking agent and anti‑crystallising ingredient. It is widely found in hydrogenated starch hydrolysates for sugar‑free confectionery. It also serves as a reference standard for carbohydrate analytical research.
