Pullulanase (EC 3.2.1.41) is a type of debranching glycoside hydrolase. It specifically hydrolyses α-1,6 glycosidic linkages in amylopectin, glycogen and pullulan, cutting off branch chains of starch molecules. Commercial pullulanase is mostly produced by microbial fermentation and available as off-white powder or light yellow liquid enzyme preparation.
It is widely utilised in starch processing industry. Combined with amylase and glucoamylase, it increases the conversion rate of starch into glucose or maltose, lowering production costs. It also improves the quality of baked goods and rice products by modifying starch retrogradation.
Its catalytic activity is sensitive to temperature and pH. Excessively high temperature will cause irreversible deactivation.
