Pectinesterase, also known as pectin methylesterase (EC 3.1.1.11), is a carboxylic ester hydrolase naturally present in fruits, vegetables and microorganisms. It catalyses the hydrolysis of methyl ester groups on pectin molecules, releasing methanol and converting high-methoxyl pectin into low-methoxyl pectin. Commercial pectinesterase is mainly produced by microbial fermentation, available as pale yellow liquid or off-white powder enzyme preparation.
It is extensively applied in fruit and vegetable processing. It regulates the demethylation degree of pectin to adjust gelling characteristics, stabilise juice clarity and optimise texture of jams and fruit purees. Its catalytic activity is highly dependent on pH and temperature, and excessive heat will trigger irreversible deactivation.
To preserve enzyme activity, the product requires sealed cool storage. Users must comply with relevant food safety regulations when adding pectinesterase into food production systems.
