Cinnamaldehyde (CAS 104-55-2, C₉H₈O, MW 132.16) is an aromatic aldehyde and the principal constituent of cinnamon bark oil (typically 60–90% of Cinnamomum cassia oil). Commercially it is almost entirely the trans isomer.

Properties: pale yellow to yellow-brown mobile liquid, characteristic hot sweet-spicy cinnamon odor; bp ~248 °C; practically insoluble in water, miscible with oils and alcohol.

Production: obtained by steam distillation of cassia/cinnamon bark oil (natural grade) or by base-catalyzed aldol condensation of benzaldehyde with acetaldehyde (synthetic grade); also available microencapsulated or as water-dispersible emulsions.

Grades: natural FCC/flavor grade, synthetic technical grade, feed/agro grade, analytical reference standard.

Uses

Flavor & fragrance — the dominant use: baked goods, confectionery, chewing gum, beverages, liqueurs, and spice blends; also in perfumery, soaps, detergents, air fresheners and potpourri as a warm-spicy note and mild fixative.
