Coumarin is mainly used in the blending fragrances of soaps and various detergents.
Coumarin and vanillin can be used together for flavoring such as candy and pastry, and added to tobacco can increase the natural flavor. Adding coumarin to the electroplating solution of zinc plating (or cadmium and nickel) can reduce the pores of the coating and increase the brightness. Coumarin is the raw material used to make other spices and many other chemicals.

Coumarin is a fragrant organic compound with a sweet, vanilla-like odor, naturally found in many plants like tonka beans, sweet woodruff, and cinnamon. It is a benzopyrone and serves as the parent structure for a large class of derivatives.
Fragrances and Perfumes: Its pleasant, sweet scent makes it a popular ingredient in fine fragrances and cosmetic products.
Flavoring Agent: It was historically used to flavor foods, tobacco, and alcoholic beverages. However, this use is now strictly regulated or banned in many countries due to toxicity concerns.
Pharmaceutical Precursor: Its most important medical use is as a starting material to synthesize anticoagulant drugs like warfarin and other 4-hydroxycoumarin derivatives.
Other Industrial Uses: It is used in electroplating baths and as a gain medium in some dye lasers.
Important Note: Coumarin itself is toxic to the liver and kidneys and is classified as a potential carcinogen. It is not the same as the blood-thinning medication Coumadin (warfarin), which is a synthetic derivative.
